LEMON MERINGUE CUPCAKES

Cook time: 20-22 mins
Serves 12

Ingredients
Sponge

100g unsalted butter
150g self raising flour
90g caster sugar
3 tbsp milk
2 eggs
1 lemon, zested
Lemon curd

Meringue
2 egg whites
90g caster sugar

Method

Preheat oven to 180C/160C Fan. Line 12-hole muffin tray with cases.

Mix sponge ingredients in a bowl, whisk until light & creamy. Spoon mixture in cases. Bake for 20-22 minutes. Cool fully. Core out the middle to leave a hole. Spoon 1/2 tsp of curd into each one.

Meringue: Whisk egg whites until soft peaks. Slowly add sugar, until a stiff glossy mixture. Spread on top of each cupcake. Blowtorch to get desire meringue.
