EASTER SIMNEL CAKE

EASTER SIMNEL CAKE
Prep time 15 -20 mins
Cook time 1hr 15 mins - 2 hrs
Serves 8-10
Ingredients
Cake:
175g unsalted butter
175g light brown sugar
3 large eggs
175g self raising flour
50g ground almonds
3 tbsp milk
50g sultanas
50g raisins
100g glace cherries, chopped
100g dried apricots, chopped
2 tsp mixed spice
1/2 tsp ground cinnamon
Pinch of salt
Topping:
500g golden marzipan
2 tbsp apricot jam
1 small egg, beaten
Method
Preheat oven to 160/ 140 Fan. Grease, line a 8" baking tin.
Mix cake ingredients together until well combined. Spoon half the mixture into tin, level the top.
Roll 1/3 of the marzipan & place on top of mixture. Spread remaining cake on top.
Bake for 1hr 45 mins - 2hrs or until golden brown. Leave to cool for 10 mins, remove from tin.
Warm jam, brush top of cake. Roll half of the marzipan & fit on top of cake. Make 11 balls from remaining marzipan, fix them with jam.
Brush with little beaten egg, use blowtorch or under a hot grill for 5 mins until gently brown.
