HOT CROSS BUNS

HOT CROSS BUNS
Prep time: 15-20 mins
Cook time: 20-25 mins
Makes 12 rolls
Ingredients
225ml milk, lukewarm
50g butter, melted & cool
2 eggs
500g white bread flour
50g caster sugar
7g yeast
1 tsp & 1/4 tsp cinnamon
1/2 tsp mixed spice
1/4 tsp nutmeg
120 g raisins
50g mixed peel
Method
In a bowl, mix together dry ingredients, gently pour in wet ingredients to form a slightly sticky dough. Knead for 10 mins, until soft and dough springs back. Cover & set aside for 1 hr, until doubled in size.
Knock back air in dough, add dried fruit, knead in. Roll into ball, flatten, divide into 12 pieces.
Shape into balls, place on baking tray, cover & prove for 20 mins.
Preheat oven 200C, 180C fan. Mix 100g plain flour with 5 tbsp water to make a paste. Pipe a cross over each bun. Bake for 20-25 mins.
Heat 2 tbsp of marmalade until gently warm, brush glaze over each bun.
