BREAKFAST BRUNCH GALETTES

BREAKFAST BRUNCH GALETTES

Cook time: 25-30 mins
Makes 2
Ingredients
40g plain wholemeal flour
3 large eggs, 1 lightly beaten
125ml milk
2 slices of bacon
1 tsp butter
50g creme fraiche
1 tsp dijon mustard
40g spinach
80g baby plum tomatoes, halved
1 tsp roughly chopped parsley to serve
Method
Put some flour in a medium bowl. Mix 1 egg & milk together & slowly whisk into flour until combined. Chill in fridge for 30 mins.
Fry some bacon until crispy, set aside to cool.
Preheat oven to 200 C, fan 180 C. Melt butter in a 23cm frying pan over medium-high heat, ladle half the batter. Swirl pan until covered. Cook for 2-3 mins on each side until golden brown. Repeat with rest of batter. Remove onto a plate.
Mix together the crème fraiche & mustard in a small bowl. Cut each bacon in half. Place galette onto a lined baking tray, spoon half the crème fraiche mixture into the centre, leave a 6 cm border all around.
Scatter some spinach around the edges, fold over the sides to make a square shape. Lay the bacon slices on the sides, crack an egg in the centre & add some tomato halves.
Repeat with other galette. Bake for 8-10 mins until white of egg is cooked. Serve hot.
