Spread the love on Valentine's morning with this easy and delicious Breakfast Heart Tart. Perfect for any day or weekend breakfast or a Sunday brunch. 

BREAKFAST HEART TART

Prep time: 15-20 mins
Cook time: 30-35 mins
Serves 2

Ingredients
375g puff pastry
60ml crème fraiche
2 eggs, plus 2 egg yolks
Separated egg whites
6 slices streaky bacon
80g cherry tomatoes
10g spring onions, chopped
10g fresh basil

Method

Preheat oven to 200C/ 180C fan. Cut pastry into a large heart shape. Score a line 1cm from the edge to create a border. Place on a baking paper & baking sheet.

Mix together crème fraiche, yolks, spring onions & season. Spoon onto pastry. Arrange bacon & tomatoes on pastry, leaving a small gap in the middle for eggs.

Gently beat egg whites, then brush pastry border. Bake for 18 mins until golden. Crack 2 eggs into the centre, bake for further 10 mins until eggs are cooked. Scatter basil leaves on top. Serve warm.
