GIN & TONIC BUNDT CAKE

This lime-flavoured sponge cake is drizzled with a tangy lemon gin glaze and topped with a sweet gin icing. The ultimate treat to impress your guests this summer!

Gin & Tonic Bundt Cake

Cooking time: 45-50 mins
Serves 12
Ingredients
300g unsalted butter
300g caster sugar
4 large eggs
300 self-raising flour
1 tsp baking powder
Zest of 1 lime & juice
Zest of 1 lemon
45ml tonic water
Syrup Glaze
Juice of 1 lemon
2 tbsp gin
2 tbsp tonic water
4 tbsp caster sugar
Decorate
175g icing sugar
1 tbsp gin
1 tbsp water
Candied lemon & lime slices
Method
Preheat oven 180C/fan 160C. Grease bundt tin.
Beat butter & sugar until light & fluffy. Add eggs, flour, lime juice, zests & mix together.
Spoon into tin & bake for 45-50 mins, until golden. Leave to cool in tin for 30 mins.
Glaze: Mix ingredients together. Prick top of cake with skewer & brush sugary mixture over the warm cake. Leave in tin until completely cold.
Icing: Mix ingredients together. Spoon icing over the cooled cake, decorate & serve.
