This Strawberries and Cream Loaf Cake is the perfect cake to celebrate any occasion with. 

All the flavours of a traditional Victoria sponge cake are combined in this simple & easy recipe. This is my favourite cake & it is simple & delicious.  



STRAWBERRY AND CREAM LOAF CAKE

Prep time: 5 - 10 mins
Cook time: 50 mins - 1 hour
Serves: 6-8

Ingredients
200g butter, softened
200g caster sugar
4 medium eggs, beaten
200g self-raising flour
2 tbsp milk
1 tsp vanilla extract
300g strawberries
50g icing sugar
200g strawberry jam
½ lemon, juiced
200ml double cream

Method
Line loaf tin with baking paper. Preheat oven to 170C/150C fan.

Beat butter & sugar. Add eggs & mix.

Sift flour, milk & vanilla & fold. Pour into tin. Bake for 50 mins-1 hr. Leave to cool.

Chop 2 strawberries into small pieces, mix with 1 tsp of the icing sugar. Set aside. 

Slice remaining fruit. Set aside. 

Mix icing sugar with 2 tsp of jam & lemon juice to make a icing.

Pour cream in bowl, whisk until soft peaks.

Slice cake in half, spread jam over base. Spread cream, spoon chopped strawberries & any juice to the cake. Sandwich cake on top. Spread cream on top, arrange fruit on top.
