CLASSIC CARROT CAKE

Serves: 10 - 12 people
Prep time: 15 - 20 mins
Cook time: 30 - 35 mins

Ingredients
225 ml vegetable oil
5 eggs
260g light brown sugar
300g grated carrots
100g raisins
Zest of 1 orange
275 g self raising flour
1.5 tsp bicarbonate of soda
2 tsp mixed spice
1 tsp ground ginger
1 tsp ground cinnamon
100 g walnuts/chopped pecans 

Method
Preheat oven to 180C/160C Fan

Grease & line two 24cm cake tins 

Mix together oil, eggs, light brown sugar in large bowl

Add the rest of the ingredients & fold to combine

Pour into prepared tins & bake for 30-35 mins

Leave to cool in the tins
