 Soft, gooey, and oh-so delicious, loaded with lots of mini eggs! 




MINI EGG BLONDIES

PREP TIME: 15 - 20 mins

COOK TIME: 25 - 27 mins

Ingredients

200g unsalted butter, melted
125g caster sugar
125g light brown sugar
3 eggs
2 tsp vanilla extract
275g plain flour
1 tbsp cornflour
¼ tsp salt
200g mini eggs

Method
Preheat oven to 180C/ 160C Fan. Line a 20cm square tin with baking paper.
In a bowl, mix together melted butter, sugars until smooth. Add eggs & mix.
Fold in flour, cornflour, until mixture is thick.
Fold in chocolates. Pour into tin & spread.
Bake in oven for 25-27 mins, until golden & firm when shaken.
Cool completely in tin, leave in fridge for a few hours to set, preferably overnight.
Decorate & enjoy!
