HOT CROSS BUN TREACLE TART

Serves 8-10 people
Prep time: 35-40 mins
Cook time: 30-35 mins

Ingredients
375g pack ready-rolled shortcrust pastry
1 small egg, beated
4 hot cross buns, torn into pieces
425g golden syrup
1 orange, zested & juiced
1 tsp mixed spice

Method
Line a 20cm tart tin & trim to fit. Prick base with fork. Put in fridge.
Roll trimmings into 3mm thick strips, about 28cms long. Brush with egg, put in fridge to chill for 15 mins.
Preheat oven to 190C/ 170C fan.
In a pan, put golden syrup & heat gently until melted & just bubbling. Remove from heat, add crumbs, left over egg, zest & juice, mixed spice & stir until combined.
Cool for 5 mins. Pour mixture into pastry case, lay pastry strips in a cross shape.
Bake for 30-35 mins. Cool in tin fully, then serve.
