Simple and easy Red Velvet Tray Bake! Beautifully light and moist flavoured red sponge, with cream cheese frosting! It's perfect for Valentine's Day!

RED VELVET TRAY BAKE

Ingredients
300g plain flour
300g caster sugar
125g unsalted butter
2 tbsp cocoa powder
3 medium eggs
250ml buttermilk
1 tsp vanilla extract
1 tsp red food colouring gel
2 tsp white wine vinegar
1 tsp bicarbonate of soda
Frosting
200g full fat cream cheese
100g soft unsalted butter
1 tsp vanilla extract
100g icing sugar
Method
Preheat oven to 180C/160C Fan, line a 24cm square tin.
Cream butter & sugar until fluffy.
Add eggs, cocoa powder, food colouring, vanilla & mix.
Add buttermilk & flour, mix until combined.
Mix in bicarbonate of soda & vinegar. Spoon mixture into tin.
Bake for 50-55 mins. Leave to cool in tin, then on a wire rack.

Frosting:
Beat butter & icing sugar until light.
Add cream cheese, vanilla & beat.
Spread frosting onto cake, decorate with sprinkles.
