These fluffy moist Red velvet Cupcakes, topped with a delicious cream cheese frosting makes them the ideal Valentine’s Day treat. 


RED VELVET CUPCAKES

Serves: 12 people
Prep time: 15 - 20 mins
Cook time: 20 - 25 mins

Ingredients
150g unsalted butter
150g caster sugar
2 large eggs
1 tsp red food gel colouring
1 tsp vanilla extract
85ml buttermilk
165g self-raising flour
1/2 tsp bicarbonate of soda
1 1/2 tbsp cocoa powder
1 tsp apple cider vinegar

Cream Cheese Frosting
150g unsalted butter
150g icing sugar
300g full-fat cream cheese
1 tsp vanilla extract

Method
Preheat oven to 180C/160C Fan. Line cupcake tin with cases.

Beat butter & sugar together until fluffy. Add eggs, vanilla.

Add food colouring, buttermilk, cocoa powder, flour & mix.

Add bicarbonate of soda & vinegar, fold until combined. Spoon into cupcake cases, bake 20-25 mins. Cool on wire rack.

Frosting:
Mix butter & icing sugar until fluffy. Add cream cheese & extract & mix until smooth.

Pipe on top of cakes, add sprinkles.
