Gingerbread Tray Cake
Serves 16

Ingredients
200g unsalted butter
200g light brown sugar
100g golden syrup
316g self raising flour
3 tsp ground ginger
1 1/2tsp ground cinnamon
3 medium eggs
200ml whole milk

Decoration
82g unsalted butter
166g icing sugar
1 1/4tsp ground ginger
1/4tsp ground cinnamon
Gingerbread men
Sprinkles

Method
Preheat oven to 180C/160C Fan. Line a 8 x 8 tin with baking paper.
Melt butter, sugar & treacle in a pan until smooth. Let it cool.
In a bowl, sift flour, spices, treacle & mix.
Add eggs, milk & combine.
Pour into tin. Bake for 40 - 45 mins, or until baked. Leave to cool in the tin.

Decoration:
Beat butter, icing sugar, spices until fluffy.
Spread onto cake & decorate.
