CHOCOLATE LOG CAKE
Serves 16

Ingredients
220g unsalted butter, softened
220g caster sugar
200g self-raising flour
4 large eggs
1 tsp baking powder
1 tsp vanilla extract
3 tbsp cocoa powder
2 tbsp milk
For the ganache
300ml double cream
300g dark chocolate
Filling
300ml double cream
Method
Preheat oven Gas 4, 180C, Fan 160C. Line 2 x 20cm cake tins.

In a bowl, beat butter & sugar until pale. Add sponge ingredients & beat together until combined.

Divide mixture between the cake tins. Bake for 25 mins. Once baked, cool in tins for 10 mins. Remove from tins, leave to cool fully.

Ganache: In a bowl break up chocolate. Heat cream gently in saucepan until under the boil, pour over chocolate, allow to stand for 3 mins. Whisk mixture until it goes glossy. Cool for 10 mins, place in fridge for 30 mins.

Whip cream until soft peaks. Assemble cake on plate, spread cream, add final cake layer. Spread ganache over cake. Enjoy!
