Mince Pie Rocky Road! These are the perfect little treats to get you into the festive mood...
I can tell you now that these are not for the faint hearted, in fact they are rich and heavenly indulgent. But it’s Christmas season right so who cares about calorie counts! If you want to get into the spirit then I suggest you make these without any further delay!

MINCE PIE ROCKY ROAD
MAKES 16
Ingredients
400g milk & dark chocolate
180g butter
70g golden syrup
6 mince pies, smashed up
125g Brazil nuts, roughly chopped
100g glacé cherries, roughly chopped
140g mini marshmallows
An 8X8 inch tin
Topping:
100g dark chocolate
1/2 cup double cream
Method
Melt chocolate, butter & golden syrup. Set aside.
In a bowl, mix the mince pies, brazil nuts, glacé cherries & marshmallows.
Pour chocolate over the mixture & mix until combined.
Pour into 8x8 inch tin. Pop in the fridge for a few hours to set.
Heat double cream in a saucepan until starting to bubble, remove & pour over chocolate. Leave for 2 mins, mix until smooth. Cool for 5 mins.
Remove rocky road from the fridge & pour ganache over the top. Decorate with your favourite festive sprinkles!
