CRANBERRY ORANGE BUNDT CAKE

Makes 12 servings

Ingredients
450g plain flour
3/4 tsp baking powder
3/4 tsp baking soda
200g unsalted butter
2tbsp orange zest
250g caster sugar
3 large eggs
250ml buttermilk
Juice of 1/2 orange
135g fresh/ frozen cranberries

Decorate
120g icing sugar
½ orange juice

Method
Preheat oven to 170C/ 150C Fan. Butter & flour bundt tin.

Mix butter, zest, sugar until fluffy. Add eggs, flour, soda, baking powder, buttermilk, juice & mix until combined.

Fold in cranberries. Pour in tin & bake for 1 hr 10 mins.

Leave in tin for 15 mins, unmould & cool fully.

Drizzle with icing & decorate.
