This easy Toffee Apple Loaf Cake is fluffy, beautifully moist, topped with delicious toffee buttercream frosting, apple slices and drizzled with toffee sauce! This will keep your guests coming back for more!

TOFFEE APPLE LOAF CAKE

Prep time: 5 - 10 mins
Cook time: 60 - 80 mins
Serves 12

Ingredients
250g unsalted butter
175g caster sugar
75g light brown sugar
250g self raising flour
5 eggs
1 tsp vanilla
200g cooking apples
1/2 tsp ground cinnamon

Buttercream
250g unsalted butter
500g icing sugar
100g toffee sauce

Decorate:
Sliced apples
Toffee sauce

Method
Preheat oven to 180C/ 160C Fan, line a 2lb loaf tin with baking paper. Peel, chop apple into pieces, set aside.

In a bowl, mix together butter & sugars until fluffy. Add eggs, vanilla, cinnamon, flour & apple, mix until combined.

Pour into tin, bake for 60-80 mins.

For the Buttercream: Beat butter & icing sugar until smooth, add toffee sauce & mix together.

Decorate: Cut cooled cake in half lengthways, pipe 1/2 the amount of buttercream on top, add cake on top. Pipe buttercream on top, decorate with apple slices. Serve!
