A buttery biscuit base, tasty white chocolate and strawberry cheesecake filling topped with strawberry puree, melted white chocolate and more strawberries.

NO-BAKE WHITE CHOCOLATE AND STRAWBERRY CHEESECAKE
Ingredients
Biscuit Base300g digestives, crushed
150g unsalted butter
Cheesecake Filling
550g full-fat cream cheese
100g icing sugar
300ml double cream
1 tbsp vanilla extract
100g white chocolate, melted
400g strawberries, chopped
25g melted white chocolate
Method
Mix together biscuit crumbs & melted butter. Tip into tin, press down firmly. Chill in fridge for 30 mins.
Chop 150-200g of strawberries in half, arrange around edge of tin, cut side up. Chop the remaining berries into small pieces.
In a bowl mix together, cream cheese, icing sugar, vanilla, double cream until thick. Fold in melted chocolate & strawberries.
Spread onto biscuit base evenly. Leave to set for at least 6 hours or overnight.
Decorate with melted chocolate & chopped strawberries.
