These delicious Lemon Curd biscuits are perfect for an afternoon tea or a special occasion.





LEMON CURD FLOWER BISCUITS

Ingredients - Makes 20

115g unsalted butter
115g caster sugar
1 large egg, beaten
1/2 tsp vanilla extract
250g plain flour, plus extra for dusting
6 tbsp lemon curd

Method

Preheat oven to 180C/ Fan 160C. Line 2 baking sheets.

Mix all ingredients together until a dough is formed. Wrap in cling film, chill in fridge for 40 mins.

Roll dough out, cut out biscuits with a cookie cutter. Put trays in fridge for 30 mins to chill.

Bake for 8 - 10 minutes, or until pale golden. Cool completely before filling with lemon curd.
