JUBILEE CHEESECAKE

JUBILEE CHEESECAKE
Prep Time: 15 min
Yield: 6 - 8 slices
Ingredients
BASE
100g ginger nuts
50g digestive biscuits
70g unsalted butter, melted
FILLING
300g full fat cream cheese
50g icing sugar
150ml double cream
75ml lemon juice (1 lemon)
TOPPING
Save 1/5th of the cheesecake aside
Decorate with some edible flowers
Edible sprinkles
METHOD
Crush the biscuits until fine breadcrumbs and add the melted butter. Mix until combined and add to a springform 6 inch baking tin.
Mix together the cream cheese, icing sugar, double cream and lemon juice until thick and creamy, about 5 minutes.
Pour over biscuit base and spread evenly in tin. Place in fridge for 6 hours or preferably overnight.
Before serving, pipe some decorative designs onto the cheesecake from the leftover mixture. Decorate the cheesecake with some edible flowers, sprinkles and serve.
The cheese cake is ready to eat at 6 hours, however it is at its best when its been stored in the fridge overnight.
Put 1/5th of the cheesecake mixture into a piping bag and place in the fridge. When ready to use, take the cheesecake and topping mixture out from the fridge. Remove the spring form tin, place cheesecake on a plate and pipe the remaining mixture onto the cheesecake.
I used a variety of sprinkles to decorate with. Be creative and use whatever sprinkles you would like on your cheesecake.
